3 lbs moose meat cut in chunks
One half lb Sausage (knockwurst or Kielbase) in chinks
3 large (6 small) carrots)
2 stalks of Celery diced
I large onion diced
Garlic
Salt and Pepper
One half tsp oregano
One half tsp thyme
One tsp sugar
One half tsp Accent
One quarter cup tomato paste

Put moose into pot

Add some bacon fat to the Meat
Saute until brown
Add All other ingredients

add more water if needed
Cook until tender
Remove vegetables and blend
Return gravy to pot
Be sure not to over-cook as this will dry out your game meat. Side dish of boiled and buttered carrots
Side dish of boiled and butgtered onions.
Side dish of potatoes

Directions
Brown moose and sausage in a large pot, add all vegetable and sauté till lightly browned. Add red wine, broth and seasonings. Let simmer 30 minutes. Remove meat. Blend sauce and vegetables from the pot to to thicken. Put thickened sauce back into pot or serving dish and serve

Serves five.
